I love trying out new recipes. I spend so much time thinking about food, what to make, when to make it, how to make it that sometimes I forget about some of my tried and true recipes. There is one exception to this however, these Chipotle Chicken Skewers.
Whenever I need to make an appetizer for a party or gathering and I don’t know what to bring, I always bring these. Super easy to make and always delicious this chicken is always a crowd pleaser. I have yet to go to a party and bring any home. They pack a little bit of a kick, so if you prefer your food on the milder side, I would recommend adding just one chipotle chile.
Chipotle Chicken Skewers w/Creamy Cilantro Dipping Sauce
(makes about 30 skewers, serves 10)
Ingredients
2 pounds boneless, skinless, chicken breasts (about 5 medium trimmed)
½ cup packed light brown sugar
¼ cup minced fresh cilantro leaves
2 chipotle chiles in adobo, minced (make sure to remove the seeds from the inside)
4 tsp. adobo sauce (from the adobo chile can)
1 ½ tsp. salt
1 tsp. chili powder
½ tsp. garlic powder
½ tsp. ground black pepper
Non-stick cooking spray
Directions
Slice the chicken breasts across the grain into 1/2-inch-thick strips (you should have about 30 strips). In a large bowl, toss the chicken with the brown sugar, cilantro, chipotle, adobo sauce, salt, chili powder, garlic powder, and pepper. Cover tightly with plastic wrap and refrigerate until the flavors meld, about 30 minutes. (The chicken, covered, can be refrigerated for up to 1 day before cooking.)
Preheat oven to 375 degrees. Place the chicken in a shallow baking dish in a single layer. Place in oven and cook for 10-20 minutes. Cooking time will depend on how big your chicken pieces are so keep an eye on them. Remove from the oven and let them cool slightly. Weave chicken onto chicken pieces for a fun appetizer, or just serve them without for an easy dinner!
